The temperature may be dropping, but pumpkin spice season is just heating up. From scented candles to lattes nothing embodies fall quite like pumpkin spice. So while you await the grand opening of Findlay’s highly anticipated Starbucks, try these delicious two-ingredient muffins to fill that pumpkin spice latte void in your life.
Yes, two-ingredients. You did in fact read that right. An added bonus, both ingredients total about $3 at any grocery store. All you need to whip up a batch of these is one 15 ounce can of pumpkin and a box of Spice Cake Mix, along with about 4 minutes of prep time.
Once you’ve gathered your ingredients, here’s how you make the magic happen:
So to recap; combine the cake mix and pumpkin puree, add mix-ins if desired (I amped it up with dark chocolate, chopped almonds, and whole dried cranberries, leaving a few plain as well), bake them for 18-22 at 350 degrees or until a toothpick can be inserted and come out clean, then anxiously await them to cool after removing them from the oven.
After about ten minutes your muffin we’ll have cooled and you can enjoy the fruits of your labor. I prefer to enjoy mine with a plentifully ration of cream cheese frosting. Because these, along with most things in life, are even better with frosting.
These muffins are so easy, even a kid could do it (and eat half the batch afterwords)!
